2nd CSA Box and Spring Veggie Pasta Recipe

 
My second CSA box from Wild Things Farm was AMAZING.  They have a “pick your own” strawberry patch….and BOY are those things yummy.  I got like 4 quarts of strawberries, a head of lettuce, a bag of spinach, a bag of carrots (REALLY yummy carrots!), a bag of spring onions, 2 bags of purple asparagus (recipe for that coming next!), along with some cilantro and rosemary.
I’m LOVING the CSA boxes.  I decided to make a spring veggie pasta for my lunches with some of the produce.
Spring Veggie Pasta

Ingredients: (makes 2 servings…double it if you want to feed more people)
-2 oz dry wheat pasta (I used Ezekiel spaghetti)
-handful of spinach, hand torn into pieces
-3 spring onions (like green onions, but the bulbs seem bigger) chopped
-4 medium carrots- peeled and then ribboned (I used a veggie pasta contraption…but you could just use your peeler to make ribbons)
-6 spears of asparagus ribboned
-2 tbsp coconut oil
-2 tbsp butter
-2 tbsp Parmesan cheese
-salt, pepper, garlic, herbs (I used dill that I had from the last CSA box)
Boil the pasta and drain it.  While the pasta is still warm and cooling, add the spinach to wilt.
In a saute pan, add coconut oil, veggies, and spices/herbs.  Cook until soft.
Combine pasta, veggies, butter, and cheese.  Enjoy!  It’s a great way to eat a bunch of veggies in a light flavorful sauce.

  2. Hi Britt! I just happened to stumble upon your post as I was randomly researching the MRC diet and you had a blog post on it. I just moved to NWA just over a year ago to work with Procter and Gamble and I also teach Zumba!! I am super passionate about health and nutrition as well and have been eating a very clean diet but I have developed many food allergies like nightshade vegetables (tomatoes, potatoes, peppers, etc).. do you think doing the CSA box would still be worth it? Can you select any kind of preferences?

    Also… I would love to get your thoughts on the MRC diet and the 30 day shred….I in general already eat fairly low carb and am in good shape… I’m more or less trying to lose “vanity pounds” for my wedding in Sept and trying to find a good, healthy way to do that while nourishing myself instead of screwing my body all up. I eat about 85% organic and am still trying to improve in those areas. I was wondering if you had any suggestions 🙂 Love your blog!!

    • Hi Jessica! Thanks for your comment! I love finding other instructors, so I’m glad you commented. 🙂 I’ll try and answer your questions:
      -My CSA doesn’t offer any choices in terms of what goes into your box, but you might contact some CSA programs in NWA and discuss your options with them.
      -I don’t recommend the MRC diet. It does result in weight loss (eating 900 cals a day has plenty to do with that!), but it isn’t anything sustainable long term, and I believe it damaged my metabolism to eat so low carb, high protein, and low calorie, even just for the 8 months I was on the program. And they push tons of supplements. Your body just doesn’t need all of that.
      -I do love the 30 Day Shred! I didn’t lose a ton of weight doing it, but noticed many changes in my body.

      Good luck with your last few pounds. They can be hard to lose…but basically you just have to tighten up everything you are doing. I recommend finding your Basal Metabolic Rate (and factoring in workout caloric needs) eating like 500 calories below that each day (I use MyFitnessPal to track that). Also, cutting out processed sugars and carbs (while still eating fruit and carby veggies) helped me a lot. Good luck!
