5th CSA Box and Beet Chip Recipe

I’ve gotten busy and fallen behind a bit on my CSA posting.  So I’m getting caught up.  Our 5th CSA box contained some yummy stuff- strawberries, blueberries, onions, cabbage, and beets.
The fruit from the farm is SO good.  And I love the onions.  I ate the fruit for breakfasts, snacks, and desserts….the onions were used in some mexican food, the cabbage recipe will be coming next week…but today, I’m focusing on the beets.  I actually waited to utilize the beets because we got two boxes in a row with beets – so I waited until I had several to play with…and I made beet chips!
I followed this recipe, peeling them under cold water, slicing them with my mandolin, and baking them on low with oil, garlic powder, pepper, and salt.  I finished them with some ranch seasoning (because everything is better with ranch!).

They were really tasty (and BEAUTIFUL!).  I didn’t really let mine get super crispy (I don’t love that almost burned taste), but they were delish and roasted and yummy.
