6th CSA Box and Egg Roll Recipe

Our 6th CSA box contained some yummy stuff: spinach, herbs (dill, rosemary, and cilantro), cabbage, carrots, onions, zucchini, and raspberries.
Y’all, the raspberries were AMAZING.  And the fresh herbs are delicious.  But from this week’s box, I made some yummy egg rolls.

Veggie Egg Roll Recipe
 
2 heads cabbage chopped
-2 onions chopped
-2 cups of carrots shredded
-2 zucchini shredded
-4 cups broth (I used beef broth)
-2 tablespoons chopped garlic
-1 tablespoon dried powdered ginger
-1 package egg roll wrappers
-splash of soy sauce, sesame oil, and rice wine vinegar
Boil the veggies in the broth, garlic, and ginger.  Once they are soft to your liking, drain them and add the soy sauce, sesame oil, and rice wine vinegar.  Add a couple tablespoons of the filling to an egg roll wrapper and wrap them up.  Bake at 400 for 10-12 minutes until crispy.

Dip them in sweet and sour sauce.  They were a big hit at our house!
