8th CSA Box and Blueberry Soup

I totally dove right into my 8th CSA box without taking a picture…but it included: 6 ears of corn, a cucumber, 3 tomatoes, 2 zucchini, a BIG head of bright green cabbage (which I learned is a Savoy cabbage), and a big box of blueberries.

I’m making more of my corn, eggrolls with the cabbage, and I’m making baked breaded zucchini.

I had an overwhelming amount of blueberries (too many to just eat as snacks) so I decided to make some blueberry soup.  On the cruises we’ve been on the past, they have had some cold fruit soups that were AMAZING, so I found a blueberry soup recipe that I adjusted just a little.


Cold Blueberry Soup
Ingredients:

  • 4 cups blueberries (fresh or frozen)
  • 3 cups water
  • 2/3 cup sugar
  • sprinkles of cinnamon, nutmeg, ginger to taste (probably used 1/4-1/2 teaspoon of each
  • tablespoon of lemon juice
  • 2 cups nonfat Greek yogurt
Combine blueberries, water, sugar, spices, and lemon juice in a saucepan and bring to a boil.  Once it boils, remove from heat and let cool off a little.  Blend the soup until your desired consistency (I used a stick blender and made mine pretty smooth….you could also do batches in a blender or use a food processor).  Once smooth, stir in the yogurt.  Chill the soup until cold.  Serve with a dollop of more yogurt or whipped cream.
It’s been THE perfect late night after dinner snack, or I’ve even had some for breakfast.  SO good.

  1. that soup looks and sounds so yummy! I have had cold strawberry soup and loved it…Lilly loves blueberries though, so I am wondering if she would like this?! Might have to try it!
