Cookbook Challenge: Twice Baked Potatoes from Duck Commander

We had family over for dinner Monday night, and I decided to use my cookbooks for inspiration.

I used Miss Kay’s Duck Commander Kitchen.  I was given this cookbook, and I’ve made a couple things from it (Hummingbird cake and some cajun something).

I decided to make Missy’s Twice-Baked Potatoes.  I liked that they sounded easy- most twice-baked potatoes I’ve tried involved stuffing potatoes back into the skins and they always fall apart.  This was more of a casserole.


It had a unique method of cooking the potatoes that worked REALLY well.  Putting them in a ziploc bag and cooking them.  They were SO soft and fluffy!


To make this: You scrubbed and poked holes in the potatoes. Put them in a closed ziploc and cook for 20 minutes until soft.

Take potato flesh out of the skin, mix with 1 stick butter, 1 package ranch mix, 1 1/3 cups milk, 1 cup shredded Colby Jack cheese, 1/2 (4.3 ounce) package of real bacon bits, 1 tsp cajun seasoning, and 1/4 cup scallions (if desired).

Mash it all up well, spread it into a pan and top with 1 more cup cheese and the other 1/2 package of bacon bits, and 1/4 cup scallions (if desired).

I baked it at 350 for 30 minutes until hot and bubbly.

Everyone LOVED it.  The top got crunchy and perfect. We hardly had any leftovers!

Cookbook success, for sure! I’ll be making this again.  Get out your cookbooks and get cooking!
