Crockpot Sriracha Honey Lime Chicken Tacos

 

So by now, it’s no secret that we love cooking in the slow cooker.  I’ve made TONS of things before….lasagna, chicken and dressing, soups, stews, roasts…but one thing we don’t really love is chicken tacos.  We love the flavor, but most chicken taco recipes make the meat SO wet and soggy…and it’s too messy to actually eat as tacos.  When you add an entire jar of salsa to the chicken, it just gets too sloppy.

So I wanted to fix that.  I wanted something full of flavor, but not super liquidy.  We love the flavor of sriracha, so I went with that.

And a note: every bottle of sriracha is a little different on the heat level (or at least that’s what we’ve noticed).  If you sample them after cooking, and adjust the heat level to your liking…I think you could serve this to children.  I made them as the recipe says…and they had GREAT flavor, but weren’t any spicier than normal tacos.  In fact, my mom (who can’t eat spicy foods) ate them and loved them.  She was surprised there was sriracha in them.

Here’s the Crockpot Sriracha Honey Lime Chicken Tacos.

Ingredients:

-one package chicken breasts, either fresh or frozen.

-3 tablespoons sriracha, divided

-2 tablespoons honey, divided

-juice of one lime- split in 2/3 and 1/3

– 1/2 tablespoon garlic powder

-1/2 tablespoon pepper

Place chicken in the crockpot, and place 2 tablespoons of sriracha, one tablespoon of honey, and 2/3 of the lime juice over the chicken, along with the garlic powder and pepper.

Cook on low for 6-8 hours (8 hours for frozen chicken) and then shred the chicken.  There will be about 1/2-1 cup of liquid from the chicken, so scoop out the chicken, leaving hte liquid behind.

Mix the remaining sriracha, honey, and lime juice on the cooked chicken.

Crockpot sriracha honey lime chicken tacos make a great shredded filling!  You can adjust the heat level by adding more sriracha, or only use a little!

Serve it however you like.  We liked it in corn tortillas with a little cheese.  These have such a great flavor, that we didn’t add a ton of toppings…but you can dress them however you see fit.

Crockpot sriracha honey lime chicken tacos are flavorful, healthy, and easy.  No artificial soup mixes or jarred salsas required. The filling is flavorful, but not too spicy.
