Favorite Meal: Mom’s Porcupine Meatballs

Jenna asked about our favorite meal for today’s commenting challenge….so this was perfect to post. 

I mentioned these last week, and then posted this picture to IG…and everyone wanted the recipe.  I warn you…they are delicious.  They are not fancy or healthy. ๐Ÿ™‚  But they are probably my favorite meal my mom makes.

Porcupine Meatballs

  • 1-1.5 pounds ground beef
  • 1 box beef rice-a-roni
  • 2 jars beef gravy
  • 1 tablespoon oil
  • mashed potatoes (if you are mom, you’ll make instant….I prefer homemade)

You take the ground beef and mix half the seasoning packet from the rice-a-roni.  Then make meatballs.  Mom makes bigger ones, like she gets 6-7 meatballs from 1.5 pounds of beef.  But you can make smaller ones too.

Mix the remaining seasoning with the rice, and roll the meatballs into the rice mixture.

Put the oil in a skillet and brown the meatballs (and leftover rice mixture) in the oil.

Cook for a few minutes until the rice is toasted and then cover with gravy.  Stir and cook covered for 20-30 minutes until the meatballs are cooked through and the rice is soft.

Serve over mashed potatoes.

  2. I am so glad you shared this! I grew up on Porcupine Meatballs, too, but I don’t think I’ve ever made them for my family. The only difference in the recipe is that my mom used rice instead of rice-a-roni {The San Francisco treat! Everytime I hear rice-a-roni, I want to sing that little phrase. Anyhoo…}.
