Years ago (like back when I was 13) I saw this recipe in a newspaper while waiting at the car wash. Yes, I know it’s random that I remember that detail….but it’s true.
I made it for whatever holiday was approaching, and everyone LOVED it. It’s unique with big chunks of apples in the spicy cake. I’ve made it for many holidays since I was 13 (I’ve been making this now for over half my life!). It’s pretty easy and delicious!
You start by cubing up 4 cups of apples (usually 4 apples….5 if you plan to snack while you chop!)
Then you get the dry ingredients….
You mix it all up (it’s a super thick, sticky batter….you get a bonus arm workout stirring!)
And it comes out golden brown and delicious! You actually top it with a cream cheese frosting too, but I didn’t manage a picture before it was devoured!
2 eggs
2 C sugar
1/2 C oil
2 tsp vanilla
2 C flour
1 tsp soda
2 tsp cinnamon
1/2 tsp salt
1/2 C chopped nuts
Combine the two. This is hard. You’ll have to mix and press and stir until your arm hurts. It’s worth it.
The mixture will be VERY thick and clumpy. You did it right.
Put it in a greased 13×9 metal pan and spread it out. It won’t look like enough batter, but trust me….it will rise.
Bake at 350 for one hour.
Topping
8 oz cream cheese
1 tsp vanilla
2/3 cup butter
1 and 1/2 C powdered sugar


YUM!!! This sounds amazing, I am definitely going to make it!!! Also, so convenient that the apples negate any calories- HEALTH FOOD!!!!! 🙂
It’s TOTALLY health food. We actually usually eat it for breakfast the morning after a holiday. Apples and cream cheese are breakfast foods, amiright?
