Homemade Breakfast Sausage

I hit the jackpot today! I am dieting and for my breakfasts, I have to eat protien. Well, I am almost sick of eggs and bison steaks. So I decided to try and make some turkey breakfast sausage that was program friendly.
You could make some too…its yummy!
It is almost fat free, sodium free, and really delicious and easy to make!

Homemade Turkey Breakfast Sausage
-2 pounds 93/7 ground turkey (I use turkey in the rolls…you know, those plastic tubes of ground turkey)
-1 tablespoon fresh ground pepper
-1/2 teaspoon red pepper flakes
-1 tablespoon dried rubbed sage
-1 teaspoon ground ginger
-2 tablespoons fennel seeds
-1/2 teaspoon garlic powder (NOT garlic salt)
-3/4 teaspoon ground coriander (I used the fancy McCormick roasted ground coriander…and its good)
-Optional 1 teaspoon salt if you aren’t watching your sodium

-Let the turkey get not so cold from the fridge (makes for easier meat mixing) and add all the seasonings and mix well. Take a small bit and fry it up in a pan to test the seasonings. When you get it right (I added a touch more fennel and pepper to mine), form into patties and cook in a skillet. You might want to spray Pam in the skillet first because these are really low fat. I cooked mine, let them cool and are freezing them individually so I can microwave one patty each morning.

They are really yummy! I know these will save me from diet boredom!
