Low Cal Pumpkin Bread

I saw this pumpkin bread posted on Pinterest and wanted to try it.  Just because I’m watching my calories doesn’t mean I can’t bake!
I didn’t have everything on hand (wheat flour, stevia, applesauce, etc.) that it called for….but I made some adjustments and it came out great!  Tyler even liked it!  It made two loaves, and I put the ingredients into MyFitnessPal, and the whole recipe comes to 1500 cals for each loaf (using full fat cream cheese!), so around 700 calories per loaf.  I think we got about 8 slices per loaf…so just under 100 calories a slice!  YUM!

Here is my recipe, adapted from Sunday Baker:

Low Calorie Pumpkin Bread
1 can pumpkin puree
2 whole eggs
1 2/3 cup flour
1 cup artificial sweetener for baking (I used Ideal)
1 t. baking soda
1/4 t. ground cinnamon
1/4 t. ground nutmeg
¼ tsp ginger
½ tsp pumpkin pie spice
½ tsp maple extract
Dash of salt
Cream filling
8 oz. cream cheese
1 T. all-purpose flour
1 t. vanilla extract
½ tsp maple extract
Mix pumpkin and eggs with sugar.  Add flour, soda, and spices.  In separate bowl, blend cream cheese, flour, and extracts.  Grease 2 loaf pans.  Put ¼ of the batter in each loaf pan.  Dollop the cream cheese mixture on top, then top with rest of the batter.  Bake at 350 for 35-40 minutes.
