Menu for the week of 6/20

Ok. I have a problem. I love to grocery shop. I love to browse the aisles, looking at all the ingredients and imagine what I could make. That’s not really a problem. The problem comes in throwing a bunch of random ingredients in my cart and getting home and realizing a) I already had two cans of X ingredient, or b)I have nothing else to go with x ingredient and, therefore, must make ANOTHER run to the grocery store to get the “other stuff” where this cycle repeats itself.

This results in expensive grocery trips that only make me run by the store on my way home every other night to be able to complete meals.

I don’t have the time or money for 3, 4, or even 5 grocery trips a week.

So I’m trying to revamp my system. With menu planning. I have tried this before, but this time its serious. I even have a shopping list organized by area of the store (dairy, meat, veggies, canned, frozen etc.).

So I will be sharing my menu with you. After all, if I’m going to all this work, why not share it? I get a lot of recipes online, so I will link to them when available. 🙂 I should also note that we are trying to eat healthy/light…so our recipes reflect that.

This week’s menu…

Monday: PF Chang’s Lettuce Wraps (can I just say how excited I am about this!) I will be using my fancy food grinder for the first time! Eeek! I will serve this with some rice.

Tuesday: Slow Cooker Chicken Parmesean. Tuesdays and Thursdays are best when they are slow cooker meals because I teach Zumba until 7:30 and we don’t get home until 8…so its better to have dinner ready. We will have green beans with this.

Wednesday: Chef Salad- just a big salad with chicken, ham, egg, cheese and fresh veggies!

Thursday: Chicken with stuffing (in the slow cooker) with salad.

Friday: Pioneer Woman’s meatballs and cauliflower rice.

Sometime this week I am probably going to make some homemade ice cream for a sweet treat. I am thinking coffee with chocolate chips. I will be using my ice cream base recipe.
