Menu- Week of 8/22

So last week’s menu didn’t really go according to plan. ha! Monday evening, my MIL offered to bring over food from a local gourmet-to-go place (and who was I to turn down yummy free food! haha!) So I didn’t cook Monday.

Tuesday, I forgot to put food in the crockpot before I left for work, so I got takeout BBQ for dinner (I had a coupon from our local Groupon-type site so I got dinner for both of us for just $5!)

Our freezer door was left partially open and some food thawed out, so I had to cook that too. So Wednesday I used some bison minute steaks and made bison chicken-fried steak. REALLY yummy.

Thursday I did manage to cook the Italian beef, and we ate leftovers Friday. And Saturday, we had cleaned the kitchen for the party and didn’t want to make it messy again, so we got a take-and-bake pizza from Walmart.

So…I have all the food from last week’s meals to cook this week! ha!

So…here is this week’s menu. I am starting a Monday night Bible study at our church. I think it should be about an hour, putting me home around 7:30. So Mondays will be quick cooking meals.

Monday: Chicken Pasta

Tuesday: Chicken with Stuffing

Wednesday: My MIL is bringing over chicken spaghetti from a local catering place in town. Yum.

Thursday: Mini Frittate– not a slow cooker meal like I usually do, but it should only take about 30 minutes to prepare once I get home from Zumba.

Friday: Bolognese Stuffed Bell Peppers
