So today I was home alone all day from the snow. And unfortunately, I’m home alone again. Tyler stayed at his moms because they are calling for more snow here…but not there. So since the roads there should be fine tomorrow, but not fine tomorrow here…he stayed there so he could work tomorrow. I totally understand and wouldn’t want him driving on bad roads…but I HATE not being with him for several days. Its ok though because (weather-permitting, I suppose) I am going to the motorcycle auction in Dallas with him Thursday and Friday….so we will get lots of together time in the car and hotel and auction.

So while I was home today, I was a good little homemaker. 🙂 I cooked a yummy dinner in the crock pot that I will share with you in a second.

I also sewed together my first Christmas stocking! It is pretty cute! I did mess up a little, putting the hang loop on the front and not the back. But its ok. I cut out 5 stockings to make (and even though they are a bit small once sewn, I’m not cutting out any more), so I guess we will just have petite stockings! 🙂

And now for my recipe. Its diet-friendly and easy to make in the crockpot. Ladies and gentlemen (or just ladies, I don’t think I have any male readers…) I present to you Mexican Chicken Soup.

Mexican Chicken Soup

Ingredients:
-3-4 chicken breasts (can be frozen)
-2 cans or one box of chicken broth- low sodium!
-1 can rotel undrained
-1 can rotel chunky drained
-1 can black beans- wash them well to get a lot of the salt out
-1 teaspoon cumin, dried cilantro, garlic powder, and chili powder
-(Optional- 1 cup frozen corn…its just not on my diet plan)

Put everything in the crock pot on high for 6-8 hours. Once cooked, take the chicken breasts out and shred them then return to the crock pot. Enjoy!

Serve and top with any mexican topping- sour cream, shredded cheese, avocado slices, tortilla chip crumbles….or you could serve it over rice. That would be good too.

I just had it plain, and it was yummy!

  2. That sounds very similar to a hot tortilla soup WW recipe that I use. It is so yummy for chilli days! I may have to try this one next time.
