On Plan Day 8

Oh man….I made it a week being pretty darn good on my eating plan!  Excited to weigh in on Saturday!  (Saturdays are my weigh in mornings).
This morning, I had this renewed energy (which was strange because we were up until 1 a.m. talking and we are usually out by 10:30/11 at night!).  I did laundry, dishes, and decided to put dinner in the crockpot.  I have this stance on crockpot cooking that it is a dump and go zone.  I don’t like crockpot recipes that require lots of prep beyond chopping and opening cans and containers.  But this morning, I decided to try and make some chili rellanos in the crockpot.  I am pretty famous in our family for my chili rellanos, but I always make them in the oven.  Well, today the crockpot would have to do.  So, I did the unthinkable (for me)….I did a crockpot recipe that included pre-cooking.  I browned and drained some bison, added some cheese and spices…and assembled my chili rellanos.  I usually roast the peppers then stuff them, but I stuffed them raw and I will let them roast all day in the crockpot.  I also usually use enchilada sauce, but I didn’t have any, so these are topped with some picante sauce. 
I ended up with a little more bison/cheese filling than could fit into the three peppers, so I stuffed the extra in a low carb tortilla for a quesadilla for me for lunch!
But then it had burnt in the crockpot, so I cooked dinner quickly.

So today looked like this:
Breakfast: Greenberry Shakeology made with diet pom/blueberry juice and pineapple juice
Snack: 90 calorie brownie
Lunch: bison/cheese quesadilla and a 100 calorie back of guacamole.  Also, some dehydrated tomato chips (post coming soon on all the dehydrating I’ve been doing!)
Snack: dried fruit (bananas, pineapple, strawberries)
Pre-workout snack just before leaving work: 4 ounces plain greek yogurt and 1 tbsp honey.
Dinner: 1 serving frozen chicken stir fry and one mini cupcake

With all the cheese and fat additions (guacamole at lunch!), my calorie count was around 1500 today.  But I taught 3 kick-butt Zumba classes….so it is a good place to be at…and totally on plan!  🙂
