Counting the Days…

So its Wednesday. Middle of the week. Stuck in the middle with you. (Sometimes I burst into random songs).

I am just counting the days. That’s where I am.

Days until I head home for my wedding shower and bridal portraits: 2 (I count today. So I go home Friday. I have today and tomorrow to live through first).

Days until my next shower in Ty’s hometown: 11 I’m excited to meet and get to know some of the people there.

Days until the wedding: 52 (OMG! REALLY?)

My mental to do list (which isn’t mental anymore because I’m writing it down): to get tuxes, our marriage license, book one more honeymoon excursion, get groomsmen and usher gifts, and have our bachelor/ette parties. Woohoo for that. And we need to do the programs and the favors too. Yup…we are trucking.

I have a problem…

I am addicted to Hobby Lobby.

Its true. I had been trying to stay away, but I had to buy some flowers for the wedding (since they were 1/2 price) so I went in. Bad idea. 🙂

I LOVE holidays. All holidays. Yesterday, I bought a Valentine’s, St. Patty’s Day, and Easter door hanger for our front door.

Also, adding to my recent obsession, I bought a plate hanger to put plates in it for every holiday. So I bought Easter plates and I found plates with a birthday cake on it for everyone’s birthday. I also bought a plain plate that I am going to paint “Happy Birthday” on to go with my cake plate. I will show those to you when I’m done.

I am still looking for St. Patty’s plates. They didn’t have a lot of green decor at Hobby Lobby yet…though I’m pretty sure that St. Patrick’s day happens before Easter? Maybe that stuff will appear after V-day? I just know there are some cute plates with shamrocks on them that belong in my kitchen! 🙂


Today’s Post: Brought to you by the letter E

Excercise…Tyler was practicing some jumps and trails and on his dirt bike at his grandpa’s farm in Oklahoma yesterday. Entourage….then we all hopped on various motorized vehicles and took off down some country roads…

I drove this: a big Rhino side-by-side with Tyler’s mom Nancy in the passenger seat. I floored it. It was fun.
Elderly, smelderly….Tyler’s grandpa in his late 70s…rough and tumble and spunky as ever. He had double bypass surgery like 3 months ago…he jumps on a trampoline almost daily, tends to cows and horses, and loves to climb through ditches and holes on his four wheeler.

Expedition…Next we trailed up some muddy, rocky dirt road up a mountain. Enjoyment…we made it to the top of this mountain. It was beautiful.

Expanse. See how beautiful? God is so good.


Hummus is Yummus!

Tyler and I took a date night to a Greek place here in town…Kosmos Cafe. It was sooo yummy! We give it a B+. The food was pretty good, but it took a little bit to get our food and we had to ask to have our appetizers first. Also, the beverage/condiment/cutlery area is really crowded and hard to get too.

We had roasted red pepper hummus…
Chicken souvlaki (greek seasoned chicken kabobs with pita bread and taziki sauce) and a falafel pita (a chickpea mixture that is fried and put on a pita with lettuce and taziki sauce. Taziki sauce is greek yogurt, cucumber and spices….dill for sure, I think. You could get it with tomato and onion, but we opted out.)

We saw a Greek diner last night on “Diner’s, Driveins, and Dives” on the Food Network and decided to try some of the food today. It was yummy. When we go out to eat and get stuff we both like, we eat half of it, then trade. So we get to try different stuff and share. We like to go out and eat and try new things. We both have an adventurous palette. We have never had Indian, Vietnamese, or Thai food….and all of those are options we could try locally. What kind of food should we try next?
