Slow Cooker BBQ Chicken

We are not fans of bottled BBQ sauce.  It usually either tastes like seasoned ketchup, or is too sweet, or just doesn’t hit the spot.  So when I came across a few recipes lately for “sprucing up” bottled sauce, I knew I had to give it a try!  I use my slow cooker twice a week and am always looking for stuff to cook in there, so I put this in the slow cooker and MAN! was it good!

-1 package chicken (I used frozen breasts)
-1 small bottle honey bbq sauce, then about half a bottle of water to swish out the extra sauce
-1.5 tablespoons balsamic vinegar
-.5 tablespoons soy sauce
-1 tsp garlic powder
-1 tablespoon minced dried onion
-dash of cinnamon
-1.5 tablespoons of Peanut Butter and Co The Heat is On spicy peanut butter (if you don’t have this, add 1 tablespoon smooth PB and a few dashes of cayenne and crushed red pepper)

Put everything in the slow cooker and cook on low 4-6 hours or until chicken is done.  Shred chicken and return to sauce for about 30 minutes.  Serve on bread, buns, over rice, or in wraps.  We thought it was extra yummy with some pickles and cheddar cheese!
