S’more Cupcakes

So for a party this week, I wanted to make cupcakes. I found a recipe online for s’more cupcakes…but they were from scratch and I’m semi-homemade kind of girl. Don’t they look good? There are 24 packed in a cupcake carrier..these are the leftovers that Ty and my parents get to enjoy. So here is how I made them:

-Chocolate cake mix (I used one box devil’s food, one dark chocolate)
-The stuff to make the mix (eggs, oil, water, etc.)
-3 egg whites
-1-2 jars marshmallow fluff
-1/4 cup powdered sugar
-6 cinnamon graham crackers, crushed somewhere in between dust and small pieces…need some little chunky bits

I made the cake mix, crushed the graham crackers. Fill the cupcake halfway then put a layer of graham cracker, then top fully with cake mix (no graham cracker showing through). Bake and let cool thoroughly.

For the marshmallow topping, make a light meringue with the egg whites and beat in the marshmallow fluff and powdered sugar. Will make a loose icing/thick glaze.

Once cooled, take cupcakes out of muffin tins and place on a cookie sheet. Cover each cupcake with glaze (I used 1/2 tablespoon per cupcake…it gets oozy), then put under the broiler on high. Watch VERY carefully, because in no time, they will be golden brown. Enjoy!

They are more “eat with a fork” because the marshmallow is gooey. But they are a great fall treat reminiscent of a fall bonfire! I hope my friends enjoy them, and you will too!
