Snow Day (Again) with Easy Cheater’s Chili

Well, thankfully, last night the U of A called off classes. So glad! I didn’t have to worry about whether or not I was going to have to get out in the weather. Tyler stayed home too becuase the roads in our area were quite icy by the time we woke up.

It was a nice snow day. We had breakfast (pancakes and eggs), watched a few movies (The Experiement=A- (had a weird ending), GI Joe=B (good action and Channing Tatum, but a lame story), and The Bounty Hunter=A ), had lunch (buffalo chicken tenders and grilled veggies…mmm!), made us a bowl of snow cream to share (Tyler had never had it before!), did some cleaning, I did a little workout, and had dinner. I HAVE to share this dinner with you. It was super easy!

I wanted chili because its cold and it sounded so good to me. Well, I didn’t really have chili ingredients on hand. But I made what might be the best chili ever using what I did have…and it was so easy!

I am calling this Cheater’s Chili because its cheating to use these ingredients. It served 2 for hearty dinners. Would be a few lunches or lighter dinners if you had a side dish or added beans.

Cheater’s Chili:
-1 lb. ground beef
-chili powder, garlic powder, crushed red pepper, cumin
-1 can Progresso Hearty Tomato soup

Brown the ground beef. Drain. Add seasonings to taste to the ground beef…and add in the soup. Heat until warm. I let mine simmer for a bit too long (Tyler helped our neighbor clear off his car and such) so I had to add in a little bit of chicken broth to loosen it back up. It was so good.

Tyler said this might be the best chili he’s ever had. I think I might make chili this way from now on! ha!

They have canceled class again tomorrow. This bums me out because I was going to begin working on analyzing my thesis data. I’m hoping this clears out so I can do that this week. But I will cherish another snow day with my love! Stay warm!
