Strawberry Banana Baked Oatmeal (Gluten Free!)

With all the strawberries I’m getting in my CSA boxes, I knew I wanted to make some healthy breakfasts….and I’ve adapted my baked oatmeal recipe to be mostly strawberries.

 

So here’s my strawberry banana baked oatmeal.  And the best part?  It’s gluten free- which means my mama (and some girls in my life group!) can enjoy it too!)

2 cups gluten free oats

1/3 cup brown sugar

1 teaspoon baking powder

1 teaspoon salt

1 tablespoon cinnamon

2 cups strawberries- sliced

1 banana- sliced

1 egg or 3 tablespoons liquid egg whites (I use egg whites)

2 cups milk

1/2 stick butter melted and cooled

2 tablespoons vanilla extract

 

Mix oats, sugar, baking powder, salt and cinnamon.  Spread into a greased 13×9 glass pan. Add strawberries to oats and toss.

Mix egg, milk, butter and vanilla and pour over the oat mixture.  Mix with a fork to incorporate.  Top with banana slices.

Bake at 375 for 30-40 minutes until brown and set. Serve warm.  You can keep it in the fridge covered (keeps for a week) and cut and serve.  Slices can be microwaved for 30-60 seconds until warm.
