Tasty Tuesday! Thai Beef Stir Fry

I had a recipe for some Thai stir fry, but it was chicken.  Well, we are having chicken tomorrow night, and I like to have beef a couple times a week (gotta keep that iron level up!) so I wanted to make it beef.  And the recipe was kinda fatty with lots of oil and such, so I trimmed it down.  Now, Tyler HATES pieces of beef/steak in stir fry.  He says it is too hard to chew.  So I made this with ground beef.  I know..ground beef stir fry?  But it worked and we loved it.  You can use whatever beef pieces you want.

Also, I actually used some dehydrated veggies that I have from the health food store for my veggie mix.  It is a mix of celery, corn, carrots, onions, and spinach.  It is dehydrated and I just boil it in water to bring it back to life.  I am positive you won’t have dehydrated veggies (because you aren’t weird like me…) so I adjusted it as if I was cooking with real veggies.

Also, I would have added some broccoli, but Tyler HATES broccoli…so its banned from dinner at our house.  But I LOVE it in stir fry, so I put some in the recipe.

Thai Beef Stir Fryserves 4…comes out to 450-500 calories depending on your rice calorie content.  A complete meal for under 500 calories! 🙂  If you want a lower calorie meal, just add more veggies and make it more servings.  Like maybe add some zucchini or peppers and up it to 6 servings.  Perfect!

Ingredients:
-1 lb ground beef or beef pieces, browned and drained
-1 package brown rice (I use a microwave pouch that has 2 servings)
-2 carrots, sliced thin
-3 stalks of celery sliced
-1 onion diced
-1 cup frozen broccoli pieces
-1/2 cup frozen corn
-1/2 cup frozen peas
-2 cups spinach, cut into pieces (fresh or frozen)
-2 tablespoons peanut butter (I use Peanut Butter & Co “The Heat is On” spicy PB that I order online..but you can use regular PB along with 1 tablespoon of sriacha)
-1 tsp curry powder
-3 tablespoons lime juice…or 1-2 limes
-1 tablespoon honey
-1 tsp garlic powder
-1 tablespoon minced dried onion
-1/4 cup soy sauce

Directions:
Brown and drain beef.  Cook brown rice.  In a pan, spray it with cooking spray and cook the veggies (carrot, celery, onion, corn, peas, and spinach) with a little bit of water.  You want them to start to soften and steam a bit.  Meanwhile, mix PB (and sriracha), curry, lime juice, honey, garlic, onion, and soy sauce in a microwave safe bowl.  Microwave for 30 seconds at a time until sauce can be mixed smooth.

When veggies are soft enough for you, add beef, rice and sauce and heat through.  Nom, nom, nom. Enjoy!
