This Week’s Menu

Just to keep myself sane with some pre-planning (and maybe share some menu ideas with you all)…here is this week’s menu at our house!

Monday: Lunch for Ty was leftover turkey spaghetti squash “spaghetti”, meal bar for me (didn’t have time to cook) and dinner is leftover Mexican Chicken Slow Cooker Soup.

Tuesday: Lunch for Ty- hamburger helper (I make one pan of this…its 3-4 lunches for him a week. I also add veggies and extra seasonings). For me- Turkey burger patty, homemade quick pickles (cucumber slices in red wine vinegar, italian herbs and garlic). Dinner: Buffalo turkey, grilled asparagus salad (no onions). (Turkey cutlets, grilled in a grill pan, then tossed with buffalo sauce. You’ll be seeing lots of hot stuff around here, Tyler got a membership to the hot sauce of the month club for our anniversary!)

Wednesday: Lunch: same as day before. Dinner: beef fajitas, refried beans (I spice them up with salsa and cheese).

Thursday: Lunch: same as before. Dinner: Dill garlic grilled chicken “nuggets” (Bite sized pieces of chicken, in garlic powder and dried dill and pepper…grilled in the oven. Great to dip in BBQ or honey mustard). Also, maybe a spinach salad.

Friday: Bison burgers for lunch for us both (no bun for me!) and ranch green beans (steamed with dry ranch seasoning…amazing). Dinner: On our own…as I will be out of town.

I have seen several menu posts on other blogs for the week….so what the heck. I thought I’d share mine too! (Recipe links when available!)

Monday: Healthy Mexican Chicken Soup

Tuesday: Lemon Pepper Tilapia with cauliflower “rice” and sauteed spinach

Wednesday: Slow Cooker Italian Beef (Sandwhiches for Ty and just the beef and a salad for me)…and we add sauteed anaheim peppers on top for some heat!

Thursday: Turkey “Spaghetti” with spaghetti squash, garlic bread

Friday: Turkey and snow peas (adapted from this recipe using turkey instead of beef…adapted loosly….I use a sauce mix from the store and add seasonings to it, but its the same idea)
